HALVES

Purchasing a half from Highwood Valley Ranch Beef is your most economical option. An added benefit is the fact that you get to choose how you would like your half to be packaged.

The cost is $3.00/lb (hot weight) plus the processors cost which is variable to the custom packaging that you desire.

On average our animals hot weight is roughly 330lbs which translates into (again roughly) 200lbs of packaged meat. This loss of weight occurs because the animal will have been dry aged for 21 days as well as trim and de-boning of the animal during processing.

A deposit of $300 is required when you order and the remaining balance is to be paid to Highwood Valley Ranch Beef upon the delivery or pick up.

 

 

HIGHWOOD VALLEY'S

COMMUNITY SUPPORTED AGRICULTURE (CSA)

Highwood Valley Ranch Beef is establishing a Community Supported Agriculture program to create more certainty between supply and demand.  CSAs spread the risks inherent to any farming enterprise over a larger group of supportive people. It is a way for customers to connect more directly with the production of their food which in our case is beef. 

We encourage our customers to visit the farm and to create a network of people interested in sustainable agriculture.  At Highwood Valley we are champions of land stewardship and we see a CSA program as a way of connecting consumers with their food and the land.  

The Highwood Valley Ranch Beef CSA program is a partnership of mutual commitment between the  producer (Highwood Valley Ranch) and you (the customer). This is a direct link between the production and consumption of beef that is equally beneficial. Our commitment is to provide you with a high quality product that has been raised naturally, humanly, and in a sustainable manner.

ORDERING

Animals will not be ready for our CSA program until October; however you may place your order at any time. The last month to order CSA from Highwood Valley Ranch is January 31, 2012

HOW IT WORKS

Over the course of 8 months you will receive approximately 25lb.s a month split into four different packages for a total of 200lbs. (see below for package breakdown). You will receive each package twice through the 8 months for a total of 8 packages.   The actual weight you will receive in any given month is based on the size of the animal.

COST and PAYMENT

The cost of a CSA subscription is $1350.00. Payment must be made in full upon delivery or pick up of your first order.

GETTING YOUR BEEF

When you place your order, arrangements will be made at that time for delivery or pick up options. If you have ordered later in the season pick up locations will be at set farmers markets.

We are not just trying to supply a quality product but also trying to educate consumers. We believe that being transparent in our operations is part of that education. We are always open to have you come and tour our ranch and start to build a relationship with your local food producers.

  • The Roasts will consist of a mix of sirloin tip, round roast, cross rib, chuck and brisket all in the 3-4lb range
  • Ribs will be a mix of long and short ribs
  • As there is only one flank steak per side the second time you get package D it will be replaced with another steak.
  • Rib eye, New York and tenderloin steaks are packaged 2 per pack. Sirloin and flank are single steaks, and the minute steaks are a fast fry steak packaged in 4.
  • You may replace ground beef with sausages for an extra $6.00/lb. You must notify us one week in advance to delivery or pick up on the change. (Farmers, Hot Italian, Saskatoon, Bratwurst or Maple Breakfast)
