Wholes, Halves, Quarters and CSAHalf
Highwood Valley Ranch provides its customers with various large quantity buying opportunities. Purchasing a whole, half, quarter animal or CSA Half  is designed to be more economical than if you were to buy the same quantity and variety from us at a local market. Prices are determined by HOT WEIGHT. This refers to the weight of the carcass directly after slaughter. This is not the weight you will receive in actual cut and processed meat because all of our animals are DRY AGED for 21 days and then processed. There will be a certain amount of loss due to moisture loss, trim and de-boning. For more information please click the link below.

The benefit of a CSA is you are able to get a half and the cuts you would like at a discounted price and you don't need a big freezer to hold it.

Highwood Valley Ranch Beef has established a Community Supported Agriculture program to create more certainty between supply and demand.  CSAs spread the risks inherent to any farming enterprise over a larger group of supportive people. It is a way for customers to connect more directly with the production of their food which in our case is beef. 
 
We encourage our customers to visit the farm and to create a network of people interested in sustainable agriculture.  At Highwood Valley we see a CSA program as a way of connecting consumers with their food and the land.  
 
The Highwood Valley Ranch Beef CSA program is a partnership of mutual commitment between the  producer (Highwood Valley Ranch) and you (the customer). This is a direct link between the production and consumption of beef that is equally beneficial.
